This is one of my favorite salads for Spring and Summer! It’s light, refreshing and easy to put together.
Springtime Beauty Bowl
A Delicious Detox!
1 cup arugula
1 cup watermelon
1/4 c. jicama
1 tbsp pumpkin seeds, soaked overnigt
1 tbsp olive oil
1 tsp fresh lime juice
pinch of sea salt
Simply add all ingredients to a bowl with dressing and toss to combine.
This is an excellent source of vitamins A, C and beta-carotene. The watermelon is refreshing, hydrating and packed with the antioxidant, lycopene.
The Jicama is a root vegetable that you peel like a potato and eat raw. If you haven’t tried it before, don’t be nervous! It has an apple like consistency, but just not as sweet. Jicama takes on other flavors of whatever you pair with it, making it a perfect addition to this salad.
