Ingredients: 8 Jumbo Shrimp 1/3 c. Brown Rice 1/4 c. Sweet Peas 1/4 c. Shredded Carrots 6 Green Beans 2 c. Baby Spinach 1/4 c. Chopped Onions Olive Oil Spray Optional: Add Spice! I like Thai Chili Roasted Garlic by Central Market Timesaving Tip: I use frozen brown rice, peas, onions and green beans!
Lightly coat a skillet with a light spray of olive oil. Add frozen onion to the pan and cook until onions are just starting to caramelize. If using raw shrimp add those next and cook until the shrimp begins to turn pink. If using pre-cooked shrimp, you’ll want to add the frozen brown rice, peas and green beans next to get those thawed. Once the rice and veggies are thawed you can add your shredded carrots and baby spinach! I added a little spice to my bowl with a tsp of Thai Chili Roasted Garlic and diluted with a little splash of water. This sauce is very spicy, so use sparingly ~ a little goes along way!
