4 Egg Whites
2 oz. Grilled Chicken
1/3 c. Brown Rice
1/4 c. Diced Green Peppers
3 Cherry Tomatoes, chopped
Olive Oil Spray
Timesaving Tip: I use frozen brown rice and frozen diced green peppers!
Lightly coat an omelet pan with a light spray of olive oil. Add frozen green peppers, brown rice and 3 cherry tomatoes and sauté until they appear to have defrosted. Add grilled chicken (a great use of leftovers) and sauté an additional minute to heat the chicken. Start adding your egg whites and cook until firm. Simple, satisfying and can be made ahead of time. This quick, easy meal works for breakfast, lunch or dinner and makes 1 single serving.
